Pretzel Dough

Method

Pretzel Preparation

1

Activate the Yeast

In a bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

2

Make the Dough

In a large mixing bowl, combine flour and salt. Add the yeast mixture and melted butter. Mix until a dough forms.

3

Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for about 1 hour.

4

Shape the Pretzels

Preheat your oven to 450°F (230°C). Divide the dough into 8 equal pieces, roll each into a long rope, and twist into a pretzel shape.

5

Prepare Baking Soda Bath

In a large pot, bring 10 cups of water to a boil and stir in the baking soda.

6

Boil the Pretzels

Carefully place each pretzel in the boiling water for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.

7

Bake

Sprinkle with coarse sea salt and bake in the preheated oven for 12-15 minutes, or until golden brown.

Cheese Sauce Preparation

8

Make Roux

In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1 minute until lightly golden.

9

Add Milk

Slowly whisk in the milk until smooth and cook until thickened.

10

Add Cheese and Seasoning

Stir in the shredded cheddar cheese, garlic powder, salt, and pepper until the cheese is melted and the sauce is smooth.
