Preheat Oven
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
Mix Dry Ingredients
In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Combine Wet Ingredients
In another bowl, whisk together the eggs, vegetable oil, vanilla extract, and buttermilk until well combined.
Combine Mixtures
Pour the wet ingredients into the dry ingredients, and mix until just combined. Gradually add the boiling water and mix until smooth.
Bake
Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Cool the Cakes
Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Prepare Cherries and Whipped Cream
While the cakes cool, prepare the cherries and whipped cream for layering. Use canned cherries or fresh cherries cooked down with sugar. Whip heavy cream with sugar and vanilla until soft peaks form.
Assemble the Cake
Once the cakes are cool, place one layer on a serving plate. Spread a layer of whipped cream and top with cherries. Place the second layer on top and repeat the process. Decorate the top with additional whipped cream and cherries.
