Prepare Sushi Rice

Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit, covered, for 10 minutes.

Season the Rice
In a small bowl, combine rice vinegar, sugar, and salt. Heat slightly until dissolved. Fluff the cooked rice and gently mix in the vinegar mixture. Allow the rice to cool to room temperature.

Roll the Handrolls
Place a nori sheet shiny side down on a clean surface. Wet your hands to prevent sticking and take a small handful of sushi rice (about 1/4 cup) and spread it onto the nori, leaving the top edge clear. Arrange cucumber, avocado, and crab on top of the rice. Start rolling from the bottom, tucking as you go, to form a cone shape. Repeat for the second handroll.

Serve
Serve the handrolls with soy sauce for dipping and a dab of wasabi on the side.
