Crust Preparation

    Combine Dry Ingredients

    In a large mixing bowl, combine almond flour and salt.

    Add Wet Ingredients

    Melt the coconut oil and add it along with the maple syrup to the dry mixture. Stir until fully combined.

    Form the Dough

    Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. It should be slightly sticky but manageable.

    Shape the Crust

    Press the dough into a 9-inch pie dish evenly across the bottom and up the sides. Prick the bottom with a fork to prevent bubbling.

    Pre-bake the Crust

    Preheat the oven to 350°F (175°C) and bake the crust for 10 minutes until slightly golden. Remove from the oven and set aside.

Filling Preparation

    Sauté Spinach

    In a large skillet over medium heat, add minced garlic and sauté for 1 minute. Add fresh spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool.

    In a medium mixing bowl, combine the cooled spinach, ricotta cheese, feta cheese, eggs, nutmeg, salt, and black pepper. Mix well until all ingredients are incorporated.

    Pour the filling mixture into the pre-baked crust, spreading it evenly.

    Return the pie to the oven and bake for 30-35 minutes, or until the filling is set and the top is slightly golden.
