Preparation

1. Malt Preparation

In a large pot, heat 5 gallons of water to around 160°F (71°C). Add the Pale Malt, Crystal Malt, and Chocolate Malt to the pot. Stir well to ensure all grains are soaked, allowing them to steep for about 30 minutes.

2. Straining the Wort

After 30 minutes, remove the grains from the pot and let them drain into the wort. You can use a strainer or a grain bag for this process. Bring the wort to a boil.

Boiling

3. Add Bittering Hops

Once the wort reaches a rolling boil, add the Bittering Hops. Boil for 60 minutes, stirring occasionally.

4. Add Aroma Hops

With 15 minutes left in the boil, add the Aroma Hops to the pot. Stir gently to incorporate.

Cooling and Fermentation

5. Cool the Wort

After the boiling process, cool the wort quickly using an immersion chiller or an ice bath until it reaches around 70°F (21°C).

6. Add Yeast

Once cooled, transfer the wort to a sanitized fermentation vessel. Sprinkle the Brown Ale Yeast on top of the wort. Seal the vessel with an airlock.

7. Fermentation Process

Allow the beer to ferment in a dark, cool place for about 1-2 weeks, or until fermentation activity has ceased.

Bottling

8. Prepare Bottles

Sanitize your bottles and caps thoroughly. In a small pot, dissolve the Priming Sugar in 2 cups of water, then boil for 5 minutes.

9. Bottle the Beer

Add the sugar solution to the fermented beer, then siphon the beer into the prepared bottles, leaving about an inch of headspace in each bottle. Cap the bottles securely.

10. Conditioning

Store the bottles in a dark place at room temperature for about 1-2 weeks to carbonate before chilling and enjoying.
