For the Fried Chicken

    Marinate the Chicken

    In a large bowl, combine buttermilk, cayenne pepper, paprika, salt, black pepper, garlic powder, and onion powder. Add chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, ideally overnight.

    Prepare the Coating

    In another bowl, combine all-purpose flour, cayenne pepper, paprika, salt, black pepper, garlic powder, and onion powder. Mix well.

    Fry the Chicken

    Heat vegetable oil in a deep-fryer or large pot to 350°F (175°C). Remove chicken from marinade, allowing excess to drip off, then dredge in the flour mixture. Fry in batches until golden brown and cooked through, about 8-10 minutes per side. Drain on paper towels.

For the Chipotle Aioli

    Make the Aioli

    In a small bowl, whisk together mayonnaise, minced chipotle in adobo sauce, lime juice, minced garlic, and salt until smooth. Adjust seasoning as needed and set aside.

For the Coleslaw

    Prepare the Coleslaw

    In a large bowl, combine shredded cabbage and shredded carrot. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour the dressing over the cabbage mixture and toss until well combined. Refrigerate until serving.

For the Sandwich Assembly

    Assemble the Sandwiches

    Toast the burger buns lightly if desired. Spread a generous amount of chipotle aioli on the bottom bun. Add a piece of fried chicken, followed by a leaf of lettuce, a slice of tomato, and a pickle slice. Top with the other half of the bun.

For the Fries

    Cook frozen fries according to package instructions until crispy and golden brown. Serve alongside the sandwiches.
