    Clean the Mussels

    Place the mussels in a large bowl of cold water. Scrub the shells with a brush to remove any dirt or debris. Rinse thoroughly under cold running water and remove any beards (fibers sticking out of the shells). Discard any mussels that are open and do not close when tapped.

    Chop Aromatics

    Peel and finely chop the garlic and shallots. Rinse the parsley, remove the stems, and chop the leaves finely.

    Sauté Aromatics

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped garlic and shallots, and sauté for about 2-3 minutes, or until they become translucent and fragrant.

    Add Wine and Mussels

    Pour in the white wine and bring it to a simmer. Add the cleaned mussels to the pot, and sprinkle with salt and black pepper.

    Cook the Mussels

    Cover the pot with a lid and let the mussels cook for about 5-7 minutes, or until they have opened up. Discard any mussels that do not open.

    Garnish and Serve

    Remove the pot from heat. Stir in the chopped parsley, and serve the mussels hot in bowls, spooning the broth over them. Enjoy with crusty bread for dipping!
