Method

Preparing the Salad

    Wash and Prepare Greens

    Thoroughly wash the mixed greens under cold water. Drain and spin dry using a salad spinner or pat dry with paper towels.

    Slice Vegetables

    Peel and thinly slice the red onion. Dice the cucumber and tomatoes into bite-sized pieces.

    Combine Salad Ingredients

    In a large salad bowl, combine the washed mixed greens, sliced red onion, diced cucumber, and diced tomatoes.

Making the Vinaigrette

    Mix Vinaigrette Ingredients

    In a small bowl or jar, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper until well combined.

    Dress the Salad

    Pour the vinaigrette over the salad ingredients in the large bowl. Toss gently to combine, ensuring all ingredients are coated with the dressing.

Adding Protein (Optional)

    Prepare Protein

    If using grilled chicken, slice the cooked chicken breast. If using tuna, drain the can and flake the tuna with a fork. If using chickpeas, rinse and drain canned chickpeas.

    Add Protein to Salad

    Top the salad with your choice of grilled chicken, tuna, or chickpeas and toss lightly to combine.
