    Cook the Lobster

    In a large pot, bring salted water to a boil. Add the lobster tails and cook for about 8-10 minutes or until they turn bright red. Remove from water and let cool. Once cooled, remove the meat from the shells and chop into bite-sized pieces. Set aside.

    Sauté the Vegetables

    In the same pot, melt the butter over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute.

    Add Tomato Ingredients

    Stir in the tomato paste and cook for 2 minutes, then add the canned diced tomatoes (with juice) and chicken broth. Bring the mixture to a simmer.

    Season the Soup

    Add heavy cream, salt, black pepper, cayenne pepper, fresh thyme, and lemon juice. Stir to combine and let simmer for 20 minutes, allowing flavors to meld.

    Add Lobster Meat

    Gently fold in the chopped lobster meat and let it heat through for about 5 minutes.

    Ladle the bisque into bowls and garnish with chopped chives before serving.
