Preparing the Swordfish

    Marinate the Swordfish

    In a bowl, combine olive oil, lemon juice, minced garlic, salt, black pepper, and paprika. Mix well and add the swordfish steaks, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

    Grill the Swordfish

    Preheat the grill to medium-high heat. Remove swordfish from the marinade, allowing excess marinade to drip off. Place swordfish on the grill and cook for 4-5 minutes on each side or until the fish flakes easily with a fork and has nice grill marks.

Preparing the Salad

    Prepare the Salad Ingredients

    In a large bowl, combine corn, diced avocado, red onion, cilantro, minced chipotle, lime juice, and salt. Toss gently to combine and set aside.

Preparing the Sides

    Cook the Fingerling Potatoes

    Place halved fingerling potatoes in a pot of salted water and bring to a boil. Cook for 12-15 minutes or until tender. Drain and set aside.

    Sauté the Green Beans

    In a skillet over medium heat, melt butter. Add minced garlic and sauté for 1 minute. Then add green beans, season with salt and black pepper, and cook for about 5-7 minutes until tender-crisp.
