Halibut Preparation

    Marinate the Halibut

    In a bowl, combine olive oil, lemon juice, garlic powder, salt, and black pepper. Place the halibut fillets in the marinade, ensuring they are well-coated. Let them marinate for at least 15 minutes.

    Grill the Halibut

    Preheat the grill to medium-high heat. Once hot, place the marinated halibut fillets on the grill. Grill for about 4-5 minutes on each side or until the fish flakes easily with a fork.

Mango Salsa Preparation

    Mix Salsa Ingredients

    In a medium bowl, combine diced mango, red onion, red bell pepper, cilantro, lime juice, and salt. Gently mix until well-combined. Set aside to allow the flavors to meld.

Coconut Rice Preparation

    In a saucepan, combine jasmine rice, coconut milk, water, and salt. Bring to a boil over medium heat, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork before serving.
