For the Fried Clams

Method

To Prepare the Fried Clams

  1. 1

    Prepare the Batter

In a mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper. Gradually add cold water, whisking until you have a smooth batter.

  2. 2

    Heat the Oil

In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Ensure there is enough oil to submerge the clams.

  3. 3

    Fry the Clams

Dip each clam into the batter, allowing excess to drip off, then carefully place them in the hot oil. Fry in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.

To Prepare the Coleslaw

  1. 4

    Mix the Ingredients

In a large bowl, combine the shredded cabbage and grated carrot.

  2. 5

    Make the Dressing

In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

  3. 6

    Combine and Chill

Pour the dressing over the cabbage mixture and toss well to combine. Refrigerate for at least 30 minutes before serving.

To Prepare the Fries

  1. 7

    Cut the Potatoes

Cut the potatoes into fries and soak them in cold water for at least 30 minutes to remove excess starch.

  2. 8

    Heat the Oil

In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

  3. 9

    Fry the Potatoes

Carefully add the soaked fries to the hot oil and fry until golden and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt to taste.

To Prepare the Tartar Sauce

  1. 10

    Mix the Ingredients

In a bowl, combine mayonnaise, dill pickles, lemon juice, and capers. Mix well.

  2. 11

    Season to Taste

Add salt to taste, adjusting according to your preference.
