Prepare the Seafood

Prep the Haddock
Rinse the haddock fillets under cold water and pat dry with paper towels. Cut them into serving-sized pieces.

Prep the Scallops, Shrimp, and Clam Strips
If the scallops are large, cut them in half. Ensure the shrimp are fully peeled and deveined, and the clam strips are ready for frying.

Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Seafood
Carefully add the breaded seafood in batches, frying until golden brown and cooked through, about 3-4 minutes for shrimp and scallops, and 4-6 minutes for haddock and clam strips. Remove with a slotted spoon and drain on paper towels.

Make the Coleslaw
In a large bowl, combine the coleslaw mix, mayonnaise, vinegar, and sugar. Toss until well combined and refrigerate until ready to serve.
