Crab Cakes

Prepare the Crab Mixture
In a large mixing bowl, gently combine the fresh crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, and chopped green onions. Be careful not to break up the crab meat too much.

Add Egg and Bread Crumbs
Add the beaten egg and bread crumbs to the crab mixture. Season with salt and black pepper to taste. Stir until everything is well combined.

Form the Crab Cakes
Using your hands, form the crab mixture into patties, about 3 inches in diameter. Place the formed cakes on a plate.

Cook the Crab Cakes
In a large skillet, heat the olive oil over medium heat. Once hot, carefully add the crab cakes to the skillet. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and keep warm.
Remoulade

Mix the Remoulade
In a small bowl, combine the mayonnaise, Dijon mustard, chopped capers, lemon juice, and hot sauce. Mix well until all ingredients are blended.

Add Fresh Herbs
Fold in the chopped fresh parsley into the remoulade mixture. Adjust the seasoning with more hot sauce if desired.
