Preparing the Filling

Cook the Seafood
In a pan over medium heat, add a tablespoon of olive oil and sauté the shrimp, scallops, and crab meat. Cook until the shrimp turns pink and the scallops are opaque. Remove from heat.

Mix the Ingredients
In a large bowl, combine the cooked seafood, minced garlic, chopped green onions, bread crumbs, grated Parmesan cheese, lemon juice, salt, and black pepper. Mix until well combined.

In the same pan, add another tablespoon of olive oil. Add the diced bell pepper and celery. Sauté until they are soft, about 5 minutes. Remove from heat and let cool slightly.
