Method

Preparation

  1. 1

    Prepare the Lobster

Bring a large pot of salted water to a boil. Add the lobsters and cook for about 5-7 minutes until bright red. Remove them from the pot and let them cool slightly.

  2. 2

    Prepare the Corn

While the lobsters are boiling, prepare the corn on the cob. You can either boil or grill the corn until tender. If boiling, add to the same pot during the last 5 minutes of lobster cooking.

Seafood Stuffing

  1. 3

    Make the Stuffing

In a skillet, melt 2 tablespoons of butter over medium heat. Add the shallots, garlic, and celery, sautéing until softened, about 4-5 minutes. In a bowl, combine the crab meat, chopped shrimp, breadcrumbs, sautéed vegetables, parsley, Old Bay seasoning, salt, and pepper. Mix well and add the melted butter. The stuffing should be moist but not overly wet.

Assembly and Baking

  1. 4

    Stuff the Lobsters

Using a sharp knife, carefully split the lobsters in half lengthwise. Remove any excess tomalley or innards and discard. Spoon the seafood stuffing generously into the lobster halves.

  2. 5

    Bake the Lobsters

Preheat the oven to 375°F (190°C). Place the stuffed lobsters on a baking sheet. Drizzle the remaining melted butter over the stuffed lobsters. Bake in the preheated oven for about 15-20 minutes until the stuffing is golden brown and the lobster meat is fully cooked.

Serving

  1. 6

    Serve the Dish

Remove the baked lobsters from the oven. Serve immediately with drawn butter, lemon wedges, and the cooked corn on the cob on the side.
