Preparing the Haddock

    Preheat the oven

    Preheat your oven to 375°F (190°C).

    Prepare the baking dish

    Grease a baking dish with 2 tablespoons of butter and arrange the haddock fillets in a single layer.

    Season the fish

    Drizzle the lemon juice over the haddock, then season with salt and black pepper.

    Prepare the butter sauce

    Melt the remaining butter in a saucepan over low heat and pour it evenly over the fillets.

    Add cracker crumbs

    Sprinkle the Ritz cracker crumbs over the top of the haddock fillets to create a crunchy topping.

    Bake the haddock

    Bake in the preheated oven for 20-25 minutes or until the fish flakes easily with a fork and the topping is golden brown.

    Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and water is absorbed.

    Prepare the Brussel Sprouts

    Trim the ends of the brussel sprouts and cut them in half. In a skillet, heat olive oil over medium heat, add the brussel sprouts, and sauté for 8-10 minutes until they are tender and lightly browned.
