Method

Dough Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing with your hands or a wooden spoon until the dough comes together. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Filling Preparation

  1. 2

    Prepare the Filling

In a medium bowl, mix together the ground pork, chopped green onions, shredded cabbage, soy sauce, sesame oil, minced ginger, minced garlic, and pepper. Stir until well combined.

Assembly and Cooking

  1. 3

    Shape the Dumplings

Divide the dough into small balls (about the size of a golf ball). Roll each ball into a thin circle, about 3 inches in diameter. Place a tablespoon of the filling in the center of each circle. Fold the dough over the filling to create a half-moon shape, pressing the edges to seal.

  2. 4

    Cook the Dumplings

In a large pot, bring water to a boil. Carefully drop in the dumplings, cooking in batches if necessary. Boil for about 5-7 minutes until they float to the top and are cooked through. Remove with a slotted spoon and set aside.

Dipping Sauce Preparation

  1. 5

    Make the Dipping Sauce

In a small bowl, combine soy sauce, rice vinegar, chili oil, and sesame seeds. Mix well and set aside.
