Cook the Beef
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until softened, about 3-4 minutes. Add the ground beef, cooking until browned and no longer pink, about 5-7 minutes. Drain excess fat.

Combine Filling Ingredients
Stir in the cream corn, salt, and black pepper into the cooked beef mixture. Mix well and let it simmer on low heat while you prepare the mashed potatoes.

Layer the Filling and Potatoes
Preheat your oven to 375°F (190°C). In a baking dish, spread the beef and cream corn mixture evenly. Top with a layer of mashed potatoes, spreading them out to cover the filling completely.

Add Cheese
Sprinkle the shredded cheddar cheese over the top of the mashed potatoes.

Bake the Shepherd's Pie
Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the top is lightly golden.

Remove from the oven and let it cool for a few minutes. Serve hot alongside dinner rolls.
