Prepare the Ingredients
Dice the green bell pepper and onion into small pieces. Chop the cooked beef or chicken into bite-sized pieces. Cook the bacon in a skillet until crispy, then crumble it. Rinse and drain the fresh spinach.

Sauté the Vegetables
In a large skillet over medium heat, add the diced onions and green bell peppers. Sauté for about 5-7 minutes until they are softened. Add the fresh spinach and cook until wilted, about 2 minutes.

Assemble the Quesadilla
In the same skillet, layer a tortilla, followed by half of the sautéed vegetables, half of the cooked beef or chicken, half of the crumbled bacon, and half of the shredded cheese. Top with another tortilla.

Cook the Quesadilla
Cook the quesadilla on medium heat for about 3-4 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with the remaining ingredients.

Serve the Quesadilla
Cut the quesadillas into wedges and serve hot with salsa and sour cream on the side.
