Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips to create shoe-string fries.

Fry the Potatoes
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Carefully add the potato strips in batches and fry until golden brown and crispy, about 3-5 minutes. Remove and drain on paper towels. Season with salt immediately.

Add Chicken Broth
Gradually whisk in the chicken broth, ensuring there are no lumps. Continue to whisk until the gravy thickens, about 5-7 minutes.

Season the Gravy
Stir in the black pepper, garlic powder, onion powder, and salt. Taste and adjust seasoning if necessary.
Assemble

Layer the Poutine
On a plate, layer the hot, crispy fries, then pour over the chicken gravy. Finally, generously sprinkle the shredded mozzarella cheese on top.

If desired, place the assembled poutine under a broiler for 1-2 minutes to melt the cheese slightly before serving.
