Preparation

    Cut the Chicken

    Cut the boneless chicken breasts into bite-sized pieces, about 1-2 inches in size. Set aside in a bowl.

    Prepare the Breading

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, paprika, garlic powder, salt, and black pepper. Mix well to combine.

    Mix Wet Ingredients

    In a separate bowl, whisk together the eggs and milk until well combined.

    Coat the Chicken

    Dip each piece of chicken into the wet mixture, allowing any excess to drip off, then dredge it in the flour mixture, ensuring it's fully coated. Place the coated pieces on a plate.

Frying

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chicken

    Carefully add the chicken pieces to the hot oil in batches, making sure not to overcrowd the pan. Fry until golden brown and cooked through, about 5-7 minutes per batch.

    Drain the Chicken

    Using a slotted spoon, remove the fried chicken from the oil and place them on a plate lined with paper towels to drain excess oil.

Serving

    Serve Hot

    Serve the popcorn chicken hot, with optional hot sauce and additional salt and pepper to taste.
