Prepare the Pickles
Drain the dill pickle spears and pat them dry with paper towels to remove excess moisture.

Make the Batter
In a large bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. In a separate bowl, beat the egg and then mix in the milk. Combine the wet ingredients with the dry ingredients, stirring until just mixed.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Pickles
Dip each pickle spear into the batter, ensuring it is fully coated.

Fry the Pickles
Carefully place the battered pickle spears into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and place them on paper towels to drain.

In a medium bowl, mix together mayonnaise, sour cream, buttermilk, dill weed, garlic powder, onion powder, salt, and black pepper until smooth.

Cover the ranch dressing and refrigerate for at least 30 minutes to allow the flavors to meld.
