    Prep the Vegetables

    Slice the green bell pepper, onion, and mushrooms into thin strips. Set aside.

    Cook the Protein

    In a skillet over medium-high heat, add 1 tablespoon of olive oil. Season the protein (steak, chicken, or burger) with salt and black pepper. Cook until browned and cooked through, about 5-7 minutes for steak or chicken, and 4-5 minutes per side for burgers.

    Sauté the Vegetables

    In the same skillet, add another tablespoon of olive oil. Add the sliced green bell pepper, onion, and mushrooms. Sauté for about 5-6 minutes until the vegetables are soft and slightly caramelized.

    Combine Protein and Vegetables

    Return the cooked protein to the skillet with the sautéed vegetables. Mix well to combine and heat through for an additional 2-3 minutes.

    Add Cheese

    Lay the slices of provolone or cheddar cheese over the protein and vegetable mixture. Cover the skillet for 1-2 minutes until the cheese melts.

Assembly

    Prepare the Rolls

    While the cheese is melting, slice the hoagie rolls or burger buns in half. If desired, toast them lightly on a separate skillet.

    Assemble the Sandwiches

    Spoon the cheesy protein and vegetable mixture onto the rolls. Serve immediately while hot.
