In a shallow dish, mix together flour, cornstarch, paprika, salt, and black pepper. In another bowl, whisk together eggs and buttermilk.

Coat the Chicken
Dip each chicken breast into the egg mixture, then dredge in the flour mixture, ensuring each piece is well coated.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully place the coated chicken breasts in the oil. Fry for about 6-8 minutes on each side, or until golden brown and cooked through. Remove from oil and drain on paper towels.

Gradually whisk in the chicken broth, ensuring no lumps form. Continue to cook, stirring frequently, until the gravy thickens (about 5-7 minutes).

Toast the bread slices until golden brown. Place a fried chicken breast on one slice of bread, top with gravy, and add pickles if desired. Top with another slice of bread.
