For the Chicken

Method

For the Chicken

  1. 1

    Prepare the Chicken

In a shallow dish, mix together flour, cornstarch, paprika, salt, and black pepper. In another bowl, whisk together eggs and buttermilk.

  2. 2

    Coat the Chicken

Dip each chicken breast into the egg mixture, then dredge in the flour mixture, ensuring each piece is well coated.

  3. 3

    Fry the Chicken

In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully place the coated chicken breasts in the oil. Fry for about 6-8 minutes on each side, or until golden brown and cooked through. Remove from oil and drain on paper towels.

For the Gravy

  1. 4

    Make the Roux

In a saucepan, melt butter over medium heat. Once melted, whisk in the flour and cook for about 2-3 minutes until a light golden color is achieved.

  2. 5

    Add the Broth

Gradually whisk in the chicken broth, ensuring no lumps form. Continue to cook, stirring frequently, until the gravy thickens (about 5-7 minutes).

  3. 6

    Season the Gravy

Stir in salt, black pepper, garlic powder, and onion powder. Adjust seasoning to taste.

For Assembly

  1. 7

    Assemble the Sandwich

Toast the bread slices until golden brown. Place a fried chicken breast on one slice of bread, top with gravy, and add pickles if desired. Top with another slice of bread.

  2. 8

    Serve

Cut the sandwich in half and serve hot with extra gravy on the side.
