    Peel the Russet potatoes using a vegetable peeler, then rinse them under cold water. Cut the potatoes into thin strips, approximately 1/8 inch wide to create shoe-string fries.

    Soak Potatoes

    Place the cut potato strips into a large bowl of cold water. Soak for at least 30 minutes to remove excess starch, which helps achieve crispiness.

Cooking

    Heat the Oil

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a deep-fry thermometer to ensure the correct temperature.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess water. This step is crucial to prevent oil splatter during frying.

    Fry the Potatoes

    Carefully lower a handful of dried potato strips into the hot oil. Do not overcrowd the pot. Fry the potatoes for about 3-4 minutes or until they are golden brown and crispy. Remove them using a slotted spoon and drain on paper towels.

    Immediately sprinkle the hot fries with salt, paprika, garlic powder, and black pepper while they are still hot. Toss to ensure even coating.
