Making the Flatbread

    Prepare the Dough

    In a large bowl, mix the all-purpose flour, baking powder, and salt together. Add the warm water and olive oil gradually, stirring until a dough begins to form.

    Knead the Dough

    Transfer the dough onto a lightly floured surface. Knead the dough for about 5-7 minutes until it is smooth and elastic.

    Rest the Dough

    Place the kneaded dough into a greased bowl, cover with a damp cloth, and let it rest for 30 minutes.

    Roll the Flatbread

    After resting, divide the dough into 4 equal pieces. Roll each piece into a flat circle about ¼ inch thick.

    Cook the Flatbread

    Heat a skillet over medium heat. Cook each flatbread for about 2-3 minutes on each side, or until golden brown and cooked through. Remove from heat.

Assembling the Flatbread BBQ Chicken

    Prepare the Chicken

    In a bowl, shred the cooked chicken breast and mix it with the BBQ sauce until the chicken is well-coated.

    Top the Flatbread

    Spread the BBQ chicken mixture evenly over each cooked flatbread.

    Add Cheese

    Sprinkle the shredded mozzarella cheese generously over the BBQ chicken on each flatbread.

    Melt the Cheese

    Place the topped flatbreads under a broiler for about 2-3 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove from the oven, garnish with fresh cilantro if desired, slice, and serve warm.
