Preparation

    Prepare the Vegetables

    Wash all the vegetables thoroughly under running water.

    Chop the Spinach

    Remove any tough stems from the spinach and chop the leaves roughly.

    Dice the Jalapeno

    Remove the stem and seeds from the jalapeno. Finely dice and set aside.

    Chop the Onion

    Peel and chop the onion into small pieces.

    Chop the Green Pepper

    Remove the seeds and core from the green pepper and chop into small pieces.

    Slice the Mushrooms

    Slice the mushrooms into thin pieces.

    Dice the Tomato

    Chop the tomato into small cubes.

    Prepare the Pineapple and Olives

    If using fresh pineapple, peel, core, and chop it into small pieces. If using canned, drain the juice. Slice the olives as needed.

Cooking

    Sauté the Vegetables

    In a large skillet over medium heat, add a tablespoon of olive oil. Once hot, add the chopped onion and jalapeno, and sauté until the onion becomes translucent, about 3-4 minutes.

    Add Spinach and Other Veggies

    Add the chopped spinach, green pepper, mushrooms, and tomato to the skillet. Cook for an additional 5-7 minutes, stirring occasionally, until the spinach wilts and the other vegetables soften.

    Mix in Pineapple and Olives

    Stir in the pineapple and olives and cook for another 2-3 minutes until heated through.
