Prepare the Ingredients
Wash and slice the boneless chicken breast into thin strips. Peel and devein the shrimp. Slice the bell pepper, carrots, and celery into thin strips. Chop the green onions and set all ingredients aside.

Cook the Protein
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken breast and stir-fry for about 3-4 minutes until cooked through. Remove the chicken from the skillet and set aside.

Cook the Shrimp
In the same skillet, add another tablespoon of vegetable oil and add the shrimp. Stir-fry for 2-3 minutes until the shrimp turn pink and opaque. Remove from the skillet and set aside with the chicken.

Stir-Fry the Vegetables
In the same skillet, add the sliced bell pepper, carrots, celery, and bean sprouts. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

Prepare the Sauce
In a small bowl, mix together the soy sauce, oyster sauce, cornstarch, and water until well combined.

Combine Everything
Return the cooked chicken and shrimp to the skillet with the vegetables. Pour the sauce over the mixture, add salt and black pepper, and stir well to combine. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Remove from heat and stir in the chopped green onions. Serve hot over steamed rice or noodles.
