    Chop Vegetables

    Finely chop the green bell pepper and onion.

    Beat the Eggs

    In a mixing bowl, crack the eggs and beat them with salt and black pepper until well combined.

Cooking

    Cook the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onions and green bell peppers and sauté for about 5 minutes until they are softened.

    Add Eggs

    Pour the beaten eggs into the skillet with the sautéed vegetables. Cook, stirring gently, until the eggs are fully cooked and scrambled, about 3-4 minutes.

    Add Cheese

    Sprinkle the shredded cheddar cheese over the cooked egg mixture, stirring gently until the cheese is melted and well combined.

Assembly

    Wrap the Burrito

    Lay out a flour tortilla on a flat surface. Spoon a portion of the egg and cheese mixture onto the center of the tortilla. Add a dollop of sour cream and a spoonful of salsa on top.

    Fold and Roll

    Fold the sides of the tortilla inwards, then roll from the bottom up to form a burrito. Repeat with the remaining tortillas and filling.

    Cut the burritos in half if desired and serve warm with extra salsa and sour cream on the side.
