    Prepare the Prime Rib

    Preheat your oven to 225°F (107°C).

    Season the Roast

    Rub the prime rib roast with olive oil, then generously season with kosher salt, black pepper, garlic powder, and fresh rosemary.

    Roast the Prime Rib

    Place the seasoned roast on a rack in a roasting pan and roast in the preheated oven for about 4-5 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

    Rest the Roast

    Remove the roast from the oven and let it rest for at least 20 minutes before slicing.

    Make the Au Jus

    While the meat is resting, pour the beef broth into the roasting pan and scrape up any brown bits. Simmer on the stovetop for 10 minutes.

    Prepare Loaded Mashed Potatoes

    Boil peeled and cubed potatoes in salted water until tender. Drain and mash with butter, sour cream, and cheddar cheese. Stir in chopped chives and season with salt and pepper to taste.

    Slice the prime rib and serve with au jus and a side of loaded mashed potatoes.
