Quesadilla Preparation

Prepare the Filling
In a large mixing bowl, combine the shredded chicken or smoked duck, diced tomato, diced green chilies, and shredded mixed cheese. Stir well to ensure the ingredients are evenly distributed.

Assemble the Quesadilla
Take one chipotle flour tortilla and place it on a flat surface. Spread about 1 cup of the filling mixture onto one half of the tortilla, leaving a little space around the edges. Fold the other half of the tortilla over the filling to create a half-moon shape.

Cook the Quesadilla
Heat a large skillet or griddle over medium heat. Lightly grease with cooking spray or a little oil. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese has melted. Repeat with the remaining tortillas and filling.

Serve the Quesadillas
Once cooked, remove the quesadillas from the skillet and let them sit for a minute before cutting them into wedges. Serve the quesadilla wedges hot with guacamole, sour cream, and salsa on the side.
