Preparation

  1. 1

    Prepare the Meat

Choose your preferred meat (corned beef, turkey, or bison). If using corned beef, slice it thinly against the grain. For turkey or bison, ensure they are cooked and sliced into manageable pieces.

  2. 2

    Prepare the Sauerkraut

Drain the sauerkraut in a colander and rinse it under cold water. Squeeze out excess moisture and set aside.

Assembly

  1. 3

    Assemble the Sandwich

On four slices of rye bread, evenly layer the sliced meat, followed by the sauerkraut and Swiss cheese slices. Drizzle with Thousand Island dressing before topping with the remaining four slices of rye bread.

Cooking

  1. 4

    Grill the Sandwich

Preheat a skillet or a griddle over medium heat. Lightly butter the outer sides of each sandwich. Place the sandwiches in the skillet and grill for about 4-5 minutes on each side, or until the bread is golden brown and the cheese has melted.

Serving

  1. 5

    Serve

Remove the sandwiches from the skillet, slice them in half, and serve warm with extra Thousand Island dressing on the side for dipping.
