Method

Catfish Preparation

    Prepare the Catfish

    Rinse the catfish fillets under cold water and pat them dry with paper towels.

    Marinate

    In a bowl, soak the catfish fillets in buttermilk for at least 30 minutes (up to 2 hours) to enhance flavor and tenderness.

    Prepare the Coating

    In a shallow dish, mix together cornmeal, flour, Cajun seasoning, salt, and black pepper.

    Coat the Catfish

    Remove the catfish from the buttermilk, allowing excess to drip off, and dredge each fillet in the cornmeal mixture until fully coated.

    Fry the Catfish

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated catfish and cook for 4-5 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Hushpuppies Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine cornmeal, flour, baking powder, sugar, and salt.

    Add Wet Ingredients

    Stir in milk and the finely chopped onion until just combined, being careful not to overmix.

    Heat the Oil

    In a separate pot or deep fryer, heat vegetable oil to 365°F (185°C) for frying.

    Fry the Hushpuppies

    Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry in batches for about 2-3 minutes, or until golden brown, turning occasionally. Remove and drain on paper towels.
