Prepare the Filling
In a mixing bowl, combine the shredded cooked chicken, chopped spinach, shredded Monterey Jack cheese, cooked rice, finely chopped onion, and chopped cilantro. Mix well until all ingredients are evenly distributed.

Fill the Eggrolls
Lay an eggroll wrapper on a clean surface with one corner pointing toward you. Spoon about 2 tablespoons of the filling mixture onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly to seal. Use a little water on the edges to help seal the wrapper.

Fry the Eggrolls
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat. Once hot, carefully place the eggrolls in the oil, a few at a time, and fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Make the Dressing
In a small bowl, combine the mashed avocado, ranch dressing, lime juice, garlic powder, and salt. Mix until smooth and well combined. Adjust seasoning to taste.
