Burger Patty Preparation
Cook Quinoa
Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it cool.
Prepare Black Beans
In a mixing bowl, mash 1 cup of cooked black beans with a fork or a potato masher until mostly smooth, leaving some chunks for texture.
Form Patties
Add the bread crumbs to the mixture to help bind the ingredients. Divide the mixture into two equal parts and form each part into a patty shape.
Cook Patties
Heat a non-stick skillet over medium heat. Lightly grease with olive oil or cooking spray. Cook each patty for about 4-5 minutes on each side or until golden brown and heated through.
Assembly
Prepare Buns
While the patties are cooking, slice the whole grain burger buns in half and toast them lightly if desired.
Serve
Serve the assembled veggie burgers immediately with your choice of side items.
