Dough Preparation
Make the Dough
In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.
Add Ice Water
Stir in the ice water, one tablespoon at a time, until the dough forms a ball. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Filling Preparation
Prepare the Apples
While the dough is chilling, peel, core, and slice the local apples into thin wedges.
Mix Filling Ingredients
In a large mixing bowl, combine the sliced apples, granulated sugar, ground cinnamon, and fresh lemon juice. Toss to coat the apples evenly.
Add Almonds
Gently fold in the sliced almonds into the apple mixture.
Assembling and Baking
Preheat Oven
Preheat your oven to 375°F (190°C).
Roll Out Dough
On a lightly floured surface, roll out the chilled dough to about 12 inches in diameter.
Transfer to Baking Sheet
Transfer the rolled dough to a parchment-lined baking sheet. Leave a 2-inch border around the edges.
Add Filling
Spoon the apple mixture into the center of the dough, spreading it evenly.
Fold Edges
Fold the edges of the dough over the apple filling, pleating it as you go to create a rustic edge.
Bake
Bake in the preheated oven for 35-40 minutes or until the crust is golden brown and the apples are tender.
Cool and Serve
Allow the crostata to cool slightly before slicing. Serve warm with scoops of vanilla ice cream.
