Method
Halibut Preparation

Sear the Halibut
Heat olive oil in a large skillet over medium-high heat. Season the halibut fillets with salt and black pepper. When the oil is hot, add the halibut and cook for 3-4 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
Potato Gnocchi Preparation

Make the Gnocchi Dough
Boil the potatoes in salted water until fork-tender. Drain and let cool slightly. Peel and mash the potatoes until smooth. In a large bowl, combine the mashed potatoes, flour, egg yolk, and salt. Mix until a dough forms. Roll into logs and cut into small pieces to form gnocchi.

Cook the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
Winter Squash Preparation

Roast the Squash
Preheat the oven to 400°F (200°C). Cut the butternut squash in half, scoop out the seeds, and peel. Cut into cubes and toss with olive oil, salt, and cinnamon. Spread on a baking sheet and roast for 25-30 minutes until tender.

Prepare the Sauce
In the same skillet used for the halibut, melt butter over medium heat. Add minced shallots and sauté until translucent. Pour in Madeira wine and lobster stock, and let it simmer for about 5 minutes. Stir in heavy cream, salt, and black pepper. Simmer for an additional 2-3 minutes until slightly thickened.
Plating

Serve the Dish
On each plate, place a serving of potato gnocchi, top with roasted butternut squash, and place the halibut fillet on top. Drizzle with the madeira lobster sauce and garnish with crumbled applewood bacon.
