Shrimp Salad

    Cook the Shrimp

    In a large pot, bring salted water to a boil. Add the shrimp and cook for 2-3 minutes or until they turn pink and opaque. Drain and let cool.

    Prepare the Salad

    In a large mixing bowl, combine the cooled shrimp, mayonnaise, Dijon mustard, chopped celery, green onions, lemon juice, Old Bay seasoning, salt, and black pepper. Mix until well combined. Adjust seasoning to taste.

Coleslaw

    Make the Coleslaw

    In another bowl, combine the shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss until the cabbage and carrot are well coated. Adjust seasoning to taste, and let sit for at least 15 minutes to allow the flavors to meld.

Bun Preparation

    Prepare the Buns

    Spread softened butter on the cut sides of the split-top buns. Heat a skillet over medium heat and place the buns buttered side down in the skillet. Toast until golden brown, about 2-3 minutes.

Assembly

    Once the buns are toasted, fill each bun with a generous scoop of shrimp salad followed by a spoonful of coleslaw on top. Serve immediately.
