Preparation of Short Ribs

    Sear the Short Ribs

    In a large pot, heat the olive oil over medium-high heat. Season the short ribs with salt and black pepper, then sear them in the pot until browned on all sides, about 4-5 minutes per side. Remove the short ribs and set aside.

    Cook Aromatics

    In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

Building the Soup

    Add Ingredients

    To the pot, add the diced tomatoes, corn, green beans, diced potatoes, Old Bay seasoning, and bay leaves. Stir well to combine.

    Add Broth

    Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low.

    Simmer Short Ribs

    Return the seared short ribs to the pot, cover, and let simmer for about 1.5 hours, or until the short ribs are tender.

Finishing Touches

    Add Crab

    Once the short ribs are tender, gently remove them from the pot. Shred the meat and discard the bones. Return the shredded meat to the pot.

    Fold in the picked Maryland blue crab carefully to avoid breaking it up too much. Let it warm through for about 5 minutes.

    Taste the soup and adjust seasoning with more salt, pepper, or Old Bay if needed. Serve hot in bowls, garnished with fresh herbs if desired.
