    Prepare the Lobster

    Bring a large pot of salted water to a boil. Add the whole lobsters and cook for 8-10 minutes until bright red and cooked through. Remove the lobsters, let them cool, and then extract the meat from the claws and tail. Chop the meat into bite-sized pieces and set aside.

    Prepare the Vegetables

    In a separate pot, melt 2 tablespoons of butter over medium heat. Add the mirepoix (onion, celery, and carrot mix) and sauté for about 5 minutes until softened.

    Cook the Potatoes

    Add the diced potatoes to the mirepoix and cook for an additional 5 minutes, stirring occasionally.

Cooking the Stew

    Combine Ingredients

    Pour in the sherry and bring the mixture to a simmer. Allow it to cook for about 5 minutes to let the alcohol evaporate.

    Add Cream and Seasoning

    Stir in the heavy cream, remaining butter, salt, black pepper, and chopped thyme. Mix well and let simmer for an additional 10 minutes.

    Add Lobster Meat

    Finally, gently fold in the lobster meat, and let it warm through for about 2-3 minutes. Be careful not to overcook the lobster.

Serving

    Serve the Stew

    Ladle the lobster stew into bowls and garnish with additional thyme if desired. Serve hot with crusty bread on the side.
