Lobster and Mushroom Topping

Method

Prepare the Polenta

    Cook the Polenta

    In a large saucepan, bring the water and salt to a boil. Slowly whisk in the coarse cornmeal, stirring continuously to prevent lumps. Reduce heat to low and cook for about 20-25 minutes, stirring frequently until the polenta thickens.

    Finish the Polenta

    Once thickened, stir in the butter and parmesan cheese until melted and smooth. Remove from heat and set aside, keeping warm.

Prepare the Lobster and Mushroom Topping

    Sauté the Mushrooms

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chanterelle and oyster mushrooms, cooking for about 5-7 minutes until softened and lightly browned.

    Add the Lobster

    Gently fold in the lobster meat and cook for another 3-4 minutes until heated through. Drizzle with truffle oil and season with salt and pepper to taste.

    Add Arugula

    Toss in the arugula and cook for an additional minute until just wilted. Remove from heat.

Serve the Dish

    Plate the Dish

    Spoon the warm polenta onto plates, creating a base for the topping. Generously pile the lobster and mushroom mixture on top of the polenta.

    Garnish and Serve

    Drizzle with additional truffle oil if desired and serve immediately.
