Salad Base

Lobster

Toasted Breadcrumbs

Method

Prepare the Salad Base

  1. 1

    Char the Romaine

Preheat a grill or grill pan over medium-high heat. Cut the romaine hearts in half lengthwise. Brush the cut sides with olive oil and sprinkle with salt and black pepper. Place the romaine cut-side down on the grill and cook for about 2-3 minutes until charred and slightly wilted. Remove from heat and let cool.

Prepare the Lobster

  1. 2

    Heat the Lobster

In a small saucepan over medium heat, melt the butter. Add the cooked Maine lobster (shelled and chopped) to the pan and toss it in the melted butter for about 2-3 minutes until warmed through. Remove from heat and set aside.

Make the Toasted Breadcrumbs

  1. 3

    Toast the Breadcrumbs

In a skillet over medium heat, add the breadcrumbs. Toast them for about 5 minutes, stirring frequently until golden brown. Add garlic powder and chopped parsley, and mix well. Remove from heat and set aside.

Prepare the Caesar Dressing

  1. 4

    Blend the Dressing

In a blender or food processor, combine smoked oysters, mayonnaise, lemon juice, grated Parmesan cheese, Worcestershire sauce, minced garlic, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste.

Assemble the Salad

  1. 5

    Combine Ingredients

On a serving platter, place the charred romaine halves. Drizzle with the Caesar dressing, then top with the warmed lobster. Finally, sprinkle the toasted breadcrumbs over the top and finish with additional grated Parmesan if desired.
