Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and granulated sugar. Melt the unsalted butter, then mix it into the crumb mixture until it resembles wet sand.

Form the crust
Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake in the preheated oven for about 8-10 minutes, or until lightly golden. Remove from the oven and let cool.

Make the filling
In a large mixing bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth and well combined.

Fill the crust
Pour the filling into the cooled pie crust, spreading it evenly. Bake for an additional 15 minutes at 350°F (175°C). Remove from the oven and let it cool to room temperature, then refrigerate for at least 3 hours or until set.

Prepare the whipped cream
In a mixing bowl, beat the heavy cream with an electric mixer on medium speed until it begins to thicken. Gradually add the powdered sugar and vanilla extract, continuing to beat until soft peaks form.

Once the pie is set, top each slice with a generous dollop of whipped cream before serving.
