Prepare the Salmon

    Marinate the Salmon

    In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Whisk together until well combined.

    Place the salmon fillets in the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Cook the Rice

    Rinse the long grain rice under cold water until the water runs clear to remove excess starch.

    In a saucepan, bring 2 cups of water to a boil. Add the rinsed rice and salt, stir once, reduce the heat to low, cover, and simmer for about 15-20 minutes or until the water is absorbed.

    In a bowl, toss the asparagus, bell pepper, and zucchini with olive oil, salt, and black pepper until well coated.
