Method
Prepare the Squash

Preheat Oven
Preheat the oven to 400°F (200°C).

Prepare Squash
Wash the delicata squash thoroughly. Cut each squash in half lengthwise, scoop out the seeds, and slice into 1/2-inch half-moons.

Season Squash
Place the sliced squash on a baking sheet lined with parchment paper. Drizzle with smoked olive oil and sprinkle with salt and black pepper. Toss to coat evenly.
Roast the Squash

Roast
Roast the squash in the preheated oven for 25-30 minutes, or until tender and golden brown, flipping halfway through for even cooking.
Make the Dressing

Whisk Dressing
In a small bowl, whisk together the smoked olive oil and balsamic vinegar until well combined.
Assemble the Dish

Cool Squash
Once the squash is done roasting, remove it from the oven and let it cool slightly.

Plate
On a serving platter, arrange the roasted delicata squash. Tear the burrata into pieces and place on top of the squash.

Drizzle the dressing over the squash and burrata. Sprinkle with pepitas and garnish with fresh parsley.
