Filet Mignon

    Prepare the Steak

    Remove the filet mignon from the refrigerator and let it come to room temperature for about 30 minutes. This will help it cook evenly.

    Season the Steak

    Generously season both sides of the filet mignon with salt and black pepper.

    Sear the Steak

    In a skillet over medium-high heat, add the olive oil. Once hot, add the filet mignon and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Add Butter and Thyme

    During the last minute of cooking, add the butter and thyme to the skillet. Spoon the melted butter over the steak to enhance the flavor.

    Rest the Steak

    Remove the steak from the skillet and let it rest for about 5 minutes before slicing.

Mashed Potatoes

    Prepare the Potatoes

    Peel and quarter the russet potatoes. Place them in a large pot, cover with cold water, and add a pinch of salt.

    Boil the Potatoes

    Bring the water to a boil over high heat. Once boiling, reduce heat to medium and cook the potatoes until tender, about 15-20 minutes.

    Drain and Mash

    Drain the potatoes and return them to the pot. Add the butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

    Serve

    Transfer the mashed potatoes to a serving dish and serve alongside the filet mignon.
