Crab Cakes

Baked Hubbard Squash

Method

Crab Cakes

1

Prepare the Crab Cake Mixture

In a large mixing bowl, gently combine the crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, eggs, breadcrumbs, chopped parsley, salt, and pepper. Be careful not to break up the crab meat too much.

2

Form the Crab Cakes

Using your hands, form the mixture into patties, about 3 inches in diameter. Place them on a baking sheet lined with parchment paper.

3

Bake the Crab Cakes

Preheat your oven to 375°F (190°C). Bake the crab cakes for 20-25 minutes or until they are golden brown and cooked through.

Baked Hubbard Squash

4

Prepare the Squash

Preheat the oven to 400°F (200°C). Cut the hubbard squash in half lengthwise and scoop out the seeds.

5

Season and Bake

Drizzle the inside of the squash with olive oil, sprinkle with brown sugar, salt, and pepper. Place the squash halves cut-side down on a baking sheet and bake for 45 minutes or until tender.

Grilled Yukon Potatoes

6

Prepare the Potatoes

Wash and scrub the Yukon gold potatoes, then cut them into quarters.

7

Season and Grill

In a bowl, toss the potatoes with olive oil, garlic powder, salt, and pepper. Preheat your grill to medium-high heat and grill the potatoes for about 15-20 minutes, turning occasionally, until they are tender and have grill marks.

Cocktail Sauce

8

Mix the Cocktail Sauce

In a small bowl, combine ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce to taste. Stir until well combined and adjust seasoning if necessary.
