Cake Batter

For Greasing Ramekins

Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four ramekins with 1 tablespoon of unsalted butter and dust them with cocoa powder to prevent sticking. Set aside.

Making the Cake Batter

  1. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine 200g of dark chocolate and 100g of unsalted butter. Microwave in 30-second intervals until melted, stirring in between until smooth.

  2. 4

    Combine Sugar and Eggs

In a separate bowl, whisk together the 150g of powdered sugar and 2 large eggs until well combined and slightly frothy.

  3. 5

    Mix Ingredients

Add the melted chocolate and butter mixture to the egg and sugar mixture. Stir in 1 teaspoon of vanilla extract and a pinch of salt until combined.

  4. 6

    Incorporate Flour

Gently fold in 50g of all-purpose flour until just combined, being careful not to overmix.

Baking

  1. 7

    Fill Ramekins

Divide the cake batter evenly among the prepared ramekins, filling them about 3/4 full.

  2. 8

    Bake

Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is soft.

Serving

  1. 9

    Cool and Serve

Remove the ramekins from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate and gently lift off to release the lava cake. Serve immediately while warm.
