    Clean the Mussels

    Rinse the PEI mussels under cold running water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

    Cook the Linguiça

    In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the sliced linguiça sausage and cook until browned and crispy, about 5-7 minutes. Remove from the pot and set aside.

    Sauté the Onions and Garlic

    In the same pot, add another tablespoon of olive oil. Add the chopped charred red onion and minced garlic. Sauté for about 3-4 minutes until softened and fragrant.

    Add the Mussels and Wine

    Return the cooked linguiça to the pot. Add the cleaned mussels, white wine, salt, and black pepper. Stir to combine and cover the pot with a lid.

    Steam the Mussels

    Cook for about 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.

    Prepare the Frites

    While the mussels are steaming, prepare the potato frites according to package instructions or by frying thinly cut potatoes in hot oil until crispy.

    Serve

    Once the mussels are cooked, remove them from heat. Serve in bowls with the broth, topped with chopped fresh parsley and a side of potato frites. Drizzle romesco sauce over the mussels for added flavor.
